Jose Olivio Chavez founded Finca El Injertal in the 1930's, and after three generations his grandson is carrying on the production of the high quality coffee they grow. The energy powering the mill is provided by the same nearby springs that help keep the farm's crops watered. 16% of the farm in Huehuetenango is preserved, keeping the native species of trees as a refuge for wildlife.
